Dinner by the time Little Einsteins' is over

Cassoulet for Dinner

Ok! I am not the best cook in our family! I am super lucky my husband likes to cook, acutally he loves to cook and he's really good at it thanks to his mother. But I am the one who does most of the week day dinners in our family since Erik is usually coaching night classes.

So, when we found an amazing recipe (that Bubba LOVES) that I can make start to finish by the time a Little Einstein's episode is over...a whopping 24 minutes....I'm pretty happy! So for dinner on Tuesday I made Sausage and Chicken Cassoulet from Nourishing Days!

The ingredients are simple. Sausage, Chicken (bone in or out), lentils, canned diced tomatoes, carrots, onions, garlic and seasoning (thyme, salt, red pepper flakes and parsley if you have it).

I won't re-hash the recipe in my blog...instead I will send you over to Nourishing Days to get the recipe! But man is it good!

I like to challenge myself with getting dinner done in the time it take to watch ONE show. We don't do a ton of TV time in our house, but I not opposed to using it when needed. I mean, how else do you get dinner cooked. The beauty of this recipe is it takes 24 minutes to prep and get it in the pan, then about 45-60 minutes to finish cooking. So you can have a little time with the kiddos before sitting down to dinner (and to clean up the mess as well). *It's not mess intensive if you clean as you go...which my husband never does. One pot meals are the best...this one could be done in a crock pot on low but it's probably best to cook it on the stove if you have the ability to do that.

The biggest thing with our nightly meals is that it has to make leftovers. Another reason I love crock pot or one pot meals! They almost always make leftovers, unless you are feeding 5 boys and a husband (you know who you are!! ;-) Then, I have no real suggestions for ya! BUT, the left overs are awesome for lunch or even dinner the next night if needed.

Ok, back to the Cassoulet, which I love saying because it makes me think I should be in French restuarant instead of my old and wonky kitchen table...but I digress!

Best Date

The Cassoulet is absolutely amazing. Flavorful, easy, and a total win in our house!

I usually pair it with a little salad, but I didn't make that happen the other day. You can add a touch of rice if you've had a big evening workout and need a few extra carbs...otherwise, eat it as is...or pair it with another veggie!

The best part is that my date for the night LOVED it...and kissed the cook in appreciation!

I'll take that as a good review!
