Bowl of Doom + SP Hash Recipe

Sweet Potato Hash | Bacon, Sweet Potato, Onion

One to two mornings a week I take a little more time and make a hardier breakfast. Since I get to be home with Bubba on Tuesdays, I usually pick that morning to make a meal that sticks to the ribs!

One of our favorites is called "Bowl of Doom." It was created by a few crossfitters at one of our favorite Paleo restuarants here in Dallas. Kozy Kitchen was one of the original gluten-free, paleo friendly places in town. There are now several others who have followed in their footsteps, but the Bowl of Doom was on of those "off the menu" items you have to know about to get. I think that's why Erik loves it even more.

A few years ago, Erik started working to perfect the recipe, while I just wing it. The Sweet Potato Hash recipes is below and while I am not the best cook in the world, I thought it was pretty tasty today.

Sweet Potato Hash for Bowl of Doom:

2 large or 3-4 medium sweet potatos, cubed

1/2 white onion, diced

3-4 strips of bacon (we prefer nitrate free)

2-3 garlic cloves (or a decent coat of garlic powder)

salt and pepper to taste

  • Heat a large skillet to medium high heat. (we use our cast iron skillet)

  • Cut bacon strips in half, as they cook better and faster this way. Place on skillet while it's still heating up.

  • Cook bacon for about 5-7 minutes once it starts sizzling, flipping about 1/2 way through the time

  • Once bacon started to get a little crispy, remove bacon and let cool on a paper towel.

  • Add chopped/pressed garlic cloves and onion to the bacon grease and sautee.

  • Once the onions begin to soften, add the sweet potatoes. Stir together and cover. Stir once a minute to prevent the potatoes from getting too crispy. Sweet potatoes take about 10-14 minutes to cook through without getting mushy.

  • Chop bacon in to smaller bits and add to the hash for the last minute of cooking

DONE!

To make the "Bowl of Doom" the way our family likes it, we fry eggs (I eat one, Erik eats two) in butter and then add them on top of the hash. You can add additional meat if you want. Leftover chicken, pork, barbeque meat are all awesome choices. We used venison sausgae this morning, with a small side of avocado.

We love this options....and so do that kids. You can bulk make the sweet potato hash and it says good in the fridge for at least a week. Quick! Easy! Delicious! And yes, it is good for you. The fats are all healthy and there isn't too much bacon. If you use a free range product from your local farmer's market, the bacon is as good as any other meat.
